Pizza, the comfort food of at least half of Italians. It is easy to eat, satiating and seasonable in many, sometimes too many, different ways. Milan and its inhabitants are crazy about pizza, and research from a few years ago confirms this: in 2023 the Lombard capital had more pizzerias than Naples. It was precisely the Neapolitan pizza, at least until a while ago, that was the favorite of the Milanese, constantly in search of the highest crust and the most traditional recipe.
For a while now, however, Roman pizza has been making a comeback. Extremely fine, wide and crunchy, this pizza is a specialty of the capital that has made its way as far north as the cold Po Valley. An excellent alterative to the classic Neapolitan or the much-criticized slice, its crunchiness has intrigued many, perhaps even you.
Roman pizza: at “Crocca’s,” the crispiest ever
Opened in 2020 Crocca brings true Roman pizza to Milan. As the name suggests, here customers will find a pizza that is low and crispy to the point, a combination achieved thanks to a low-hydration dough rolled out very thinly with a rolling pin, then baked at a high temperature and combined with quality ingredients.
The menu is extensive, suitable for both the more skeptical, who can start with a simple margherita (even a vegan version!), and the more daring, who can try pizza amatriciana, carbonara or red cabbage, porchetta and pecorino.
