What happens when Japanese culinary culture meets Spanish culinary culture? In Milan, the answer comes from Pintxo Bistró by Albufera, which on Monday, November 9, will host a tasting dinner featuring sake and tapas.
Guiding the tasting will be Silvia Amoni, a wine sommelier since 2016 and a sake sommelier since 2023, who will lead guests on a journey to discover different sake varieties, pairings, and interesting facts.
Six sakes, six tapas, and a menu to discover
The evening begins with a welcome cocktail made with yuzu and ginger beer. This is followed by six Japanese sakes paired with six tapas: pan con tomate with crispy bread, fresh tomato, and extra virgin olive oil; piquillo peppers stuffed with creamed salt cod; 36-month-aged bellota ham; sautéed porcini mushrooms with marinated egg yolk and ham lard. The menu also features mussels in escabeche and tartare with foie gras and blackberry gel.
The tasting concludes with Pop Chocolate, a chocolate dessert featuring Maldon salt, extra virgin olive oil, and a sparkling note.
G-A-N-A, a dinner to share
Tapas x Sake is part of G-A-N-A, an acronym for Gastronomia Alegre, Nuevos Amigos: Pintxo Bistró’s social dinner format, designed around convivial tables where food becomes an opportunity to chat and meet new people.
Pintxo Bistró by Albufera is a culinary project dedicated to the Basque Country, created by chef Mateus Ávila Lobo Coelho and Alice Paglia, the founders of Albufera.
