Schnitzel is a typical dish in Milan. However, two types that are often offered in restaurants should be distinguished: elephant’s ear and cotoletta alla milanese. For purists, the giant, boneless schnitzel (elephant’s ear) cannot be considered the true Milanese one.
According to them, it tastes different and has nothing to do with the traditional dish. So when we talk about cotoletta alla milanese, we are referring to a very specific cut of meat that is taken from the veal loin and has the bone, fried in butter and breaded with stale but not old white bread crumbs. In addition, the temperature of the flame is also important to consider.
In short, it sounds like a trivial dish, but it hides painstaking preparation.
